What Chicago Italian
beef is.

Chicago Italian beef is thinly sliced, slow-roasted beef piled on crusty Italian-style French bread, wet with Italian gravy, and finished with giardiniera or sweet peppers. You order it dry, wet, or dipped.

That is the whole sandwich. Not a French dip with peppers. Not deli roast beef. The meat is sliced paper thin so it can drink the gravy. The bread has a soft middle and a crust that can take a dunk. The heat comes from the jar, not from a bottle of hot sauce.

Bari Beef has made this sandwich’s parts — the roast, the gravy, the giardiniera — as a Chicago-area manufacturer since 1973. Restaurants, delis, and family tables have used the same kitchen. The Beef Box is that kitchen, packed cold and shipped to your door.

Where it came from

A short history.

At the turn of the 20th century, Italian immigrants working the Union Stock Yards brought home tough, cheap cuts of beef. They slow-roasted them until they gave, simmered them in spices, sliced them thin, and piled them into fresh Italian bread. It fed a wedding without emptying the envelope.

A century later it is still Chicago’s sandwich — as native to this city as deep-dish and a day game. The stands made it famous. The manufacturers kept the roast in the city’s kitchens when the yards were gone.

The kitchen

How restaurants
make it.

A stand does four jobs well. The cut has to roast evenly, stay tender, slice paper thin across the grain, and hold gravy. Lean roasting cuts from the round and sirloin are the usual answer. Bari slow-roasts those cuts with its own spice blend, cools the roast overnight, then slices it thin.

The gravy is not a packet of au jus. Drippings come off the roast and get cut with the same spice blend. That is why the beef and the gravy taste like one thing.

On the line, the slicer keeps moving. Bread gets split. Beef goes in the pan with gravy. The sandwich is built to order: dry, wet, or dipped, hot or sweet. That is the restaurant method. The shipped pack is the same roast and the same gravy — already cooked — so your job at home is heat, split, and pile.

What cut of beef is best for Italian beef

Dry, wet, dipped.

Dry

Beef on the bread with just the gravy it already holds. The crust stays crisp. This is the sandwich you can eat while walking.

Wet

The beef gets extra gravy in the pan, or a ladle over the top, before it hits the bread. Juicy. Still structurally a sandwich.

Dipped

The whole sandwich goes for a swim in the gravy. The bread soaks. You need a plate, a stack of napkins, and no meeting after.

Hot

Giardiniera — pickled vegetables in oil, with heat. Bari’s house default in the packs is hot giardiniera. That is a house default, not a city ordinance.

Sweet

Roasted sweet peppers instead of, or next to, the giardiniera. Milder. Still Chicago.

Four parts

The build.

The bread. Chicago Italian beef wants a long French-style loaf with a soft interior and a crust that can take gravy. Turano is the loaf in Bari’s Family, Party, and Meal Kit boxes for a reason. Soft bread collapses. A baguette that is all crust fights the beef.

The gravy. Italian-style gravy here means the roast’s own drippings plus the spice blend — not brown-from-a-jar gravy, not a cup of plain jus on the side. If the beef and the gravy came from two different places, you can taste it.

The giardiniera. Chicago giardiniera is chopped pickled vegetables in oil, usually with a real kick. It is part of the sandwich, not a garnish you can skip and still call it the same thing. Bari also bottles mild and hot, and packs them in gift boxes.

The sweet peppers. Optional, classic, and the other half of “hot or sweet.” If you want both, say both.

At your house

How to make an Italian
beef sandwich at home.

If the box already has Bari beef in it, you are not cooking a roast. The beef is fully cooked. Warm it in its own gravy until it is hot. Split the bread. Pile the beef. That is the whole job, and it takes one person about ten minutes.

For dipped: hold the finished sandwich in the hot gravy until the bread drinks. Pull it, giardiniera on top, plate underneath. Do not be shy and do not use a thin paper plate.

If you are starting from a raw roast and a spice pack instead, that is a different afternoon — chuck in a slow cooker, hours on the counter, then the same assembly. Use the heating page for that method.
