Part of The Complete Guide

Chicago
Giardiniera.

Chopped pickled vegetables in oil, usually with a real kick. On an Italian beef it is not a garnish. It is the heat, the crunch, and half of “hot or sweet.”

Skip it and you still have beef on bread. You do not have the same sandwich.

The pepper on the beef

Part of the sandwich,
not a side dish.

Chicago Giardiniera is chopped pickled vegetables packed in oil. The cut is small enough to ride on thinly sliced beef. The oil carries the heat onto the bread. The crunch is the contrast the gravy does not give you.

You order it as hot. Sweet is the other call — roasted sweet peppers, milder, still Chicago. You can say both. None of that is hot sauce from a bottle.

Two jars, two jobs

Chicago is not
the Italian jar.

Chicago Giardiniera Italian-style jar
The cut Chopped, small enough for a sandwich Usually larger florets and chunks
The liquid Oil, with the pickle underneath Mostly vinegar brine
The heat Usually a real kick Often milder, more pickle than fire
The job On an Italian beef, or next to sausage An antipasto plate

Same family of pickled vegetables. Different city, different cut, different job. A packet of pepperoncini is neither.

Hot or sweet

The other half
of the order.

Hot

Giardiniera. Pickled vegetables in oil, with heat. Bari’s house default in the packs is hot Giardiniera. That is a house default, not a city ordinance.

Sweet

Roasted sweet peppers instead of, or next to, the Giardiniera. Milder. Still Chicago. The packs do not ship those — you add them if you want both.

Both

Say hot and sweet. You get the crunch and the heat, plus the roasted peppers. Classic if you want everything on the sandwich.

Dry, wet, or dipped

In the jar

The same kitchen
that packs the beef.

Bari bottles mild and hot, and packs them in gift boxes. The shipped beef packs already include hot Giardiniera with the roast. If the house already knows the sandwich, the jar or the gift box is the part a regular grocery store cannot fake.

Giardiniera Hot

The 16 oz jar. Classic Chicago heat. The same hot Giardiniera that goes on the sandwiches.

Giardiniera Mild

The 16 oz jar with a gentler kick. Same vegetables, less fire.

Giardiniera Gift Box

The Chicago gift when the house already has the beef. Mix-and-match heat if you want both.

The Beef Box

The roast, the gravy, the Turano bread, and hot Giardiniera — packed together.

FAQ.

What is Chicago Giardiniera?

Chopped pickled vegetables in oil, usually with heat. It goes on an Italian beef. It is part of the sandwich, not a garnish.

Is it the same as the Italian jar?

No. The Italian jar is usually larger-cut vegetables in vinegar. Chicago chops them smaller, packs them in oil, and turns up the heat.

Hot vs sweet — what’s the difference?

Hot is Giardiniera. Sweet is roasted sweet peppers. You can order both. Bari’s packs ship hot Giardiniera as the house default.

Put it on the beef.

The jar, the gift box, or the full pack with the roast and the gravy. Packed cold in South Elgin.
