Part of The Complete Guide
What Italian beef
gravy is.
Not brown-from-a-jar. Not a cup of jus on the side. The liquid on an Italian beef is the roast talking — drippings plus the spice blend that cooked with it.
If the beef and the gravy came from two different places, you can taste it.
The short version
It is the roast,
cut with spice.
A stand does not open a packet. Drippings come off the roast and get cut with the same spice blend. That is Italian-style gravy on this sandwich. That is why the beef and the gravy taste like one thing.
Paper-thin slices are there so the meat can drink it. The bread is built to get wet. Dry, wet, or dipped is how much gravy you want — not whether gravy is invited.
What it is not
Three liquids that
are not this gravy.
Brown gravy
The Thanksgiving kind. Thick, flour-bound, from a jar or a roux. Italian beef gravy is thinner. It is the roast, not a sauce you pour on meatloaf.
A cup of jus
A French dip serves the liquid alongside. You dip when you want to. On an Italian beef the gravy is already on the beef, or the sandwich goes in. No cup on the side.
A packet from somewhere else
If the beef roasted in one kitchen and the liquid came from another, you can taste the seam. The gravy should be from the same roast that got sliced.
On the sandwich
Dry, wet, or dipped
is the gravy call.
Dry: the gravy the beef already holds. Wet: extra on the beef before it hits the bread. Dipped: the finished sandwich in the pan. The liquid does not change. The amount does.
The gravy is a setting, not a side dish.
At your house
Warm the beef
in its own gravy.
If the box already has Bari beef in it, you are not making gravy from scratch. The beef is fully cooked. Warm it in the gravy that shipped with it until it is hot. Split the bread. Pile the beef. Spoon on the Giardiniera.
That gravy in the pack is from the roast. Family, Party, Bulk, and the Meal Kit all ship it that way — Italian-style gravy in with the beef, not a packet you hope matches.
Straight answers
FAQ.
What is Italian beef gravy?
Drippings off the roast plus the same spice blend. Not brown gravy. Not a cup of jus on the side.
Is it the same as au jus?
No. A French dip serves jus alongside. Italian beef gravy lives on or in the sandwich.
How do I heat it at home?
Warm the fully cooked beef in its own gravy until it is hot. Extra gravy on the beef is wet. The sandwich in the gravy is dipped.
Same roast.
Same gravy.
Made by Bari Beef in the Chicago area and shipped directly from our South Elgin facility. The liquid in the pack came off the beef in the pack.
