During the turn of the 20th century, in the heart of burgeoning Chicago, Italian immigrants working the Union Stock Yards brought home tough cuts of beef and made them worth eating — slow-roasted, simmered in spices, thinly sliced, and piled into fresh Italian bread.
Italian beef became a wedding staple because it fed a crowd without breaking the bank. A hundred years later, it is still Chicago’s signature sandwich — as native to this city as deep-dish pizza and a day game at Wrigley.

We season and roast the finest cuts, cool overnight, slice paper thin, and harvest the natural drippings off the roast for the gravy. Some things have not changed since Italian beef’s humble beginnings on the South Side.
